Gluten Free Bagels

What’s better than toasty bread? I’ll wait…That’s right, not much! These bagels are a hybrid between a traditional NY style bagel you’d find in a Jewish delicatessen and one of those over simplified weight watchers bagels that rose to Pinterest fame years ago. Honestly the closest thing I’ve had to AIP bread I’ve ever had. I’ve tried the mix and found the bagels to be on the flat side, and very doughy…maybe I’m just bad at directions, I dunno. They kind of scratched the itch, but not all the way.

Pub-Style Fingersteaks

Chicken tenders aka tendies are one of the social type foods that us AIP-ers often feel like we don’t get to enjoy any more, but I’ve got news for you, and you’ll never look at pickle juice as trash again. Moroccan Beef Skillet

Not your mom’s hamburger helper, this one pan meal is filled to the brim with tender squash and leafy greens. I tend to avoid ground beef in favor of other meats, but not anymore. I composed this dish after a recent trip to cliffs where I grabbed a pre-cut slab of this funny looking German Sweet Potato Squash (similar to a Banana Squash) Having no clue what to do with it and no inclination to go to the store for other ingredients I pulled this together with what we had on hand. Its become part of our weekly rotation because the whole family loves it…so much we rarely have leftovers.
