AIP Wasabi Salmon Bowls
Not just another boring sheet pan dinner. Cooks under the broiler in minutes. Cleanup is a snap. Plus, if you’re feeling extra fancy, you can eat it with chopsticks!
1 Salmon fillet, cut in to portion size pieces (2x3) its alllll about surface area!
2 heads of broccoli, broken down in to florets (approx 5-6 cups if using pre-cut)
1 lb mushrooms, washed and dried just before preparation
* I love to use a mix of crimini and shiitake, but any mushroom will do perfectly
1/4 cup + 2 T Coconut Aminos
1 t Pink or Sea Salt
Olive or Avocado Oil
Preheat your oven to 450 f.
Place Salmon (skin side down if its present). Toss Broccoli with a scant amount of oil, dump on sheet tray. Repeat with Mushrooms. Drizzle the whole lot with the 1/4 c Coconut Aminos and sprinkle with Salt.
Place sheet pan in the oven and set it to broil. Cook for 5-10 minutes, depending on oven capabilities. You’ll know when its done because the broccoli and mushrooms will have started to pick up a nice tan and the salmon will be starting to firm up. (don’t cook it to death, I beg you)
Remove from the oven and let rest while you prepare the sauce.
Combine wasabi paste and remaining 2 T Coconut Aminos. My taste varies widely, for flavor I like to use about a 1/2 tsp, If its heat I’m craving I go closer to 3/4 tsp.
Divide veggies into 2 bowls, top with one piece of salmon. Drizzle with Wasabi sauce and dig in!
Bonus if you have leftover salmon for another meal, thats my kinda prep!
