AIP Bulletproof Collagen Golden Latte
Lets face it, for some of us giving up coffee is one of the hardest dietary challenges we will encounter. I had a pretty severe coffee habit (to put it lightly). When I started the AIP I didn’t immediately give up coffee, it took me about a month to fully let it go. Not necessarily because I was a slave to the caffeine, but I just LOVE a good cup of coffee. Not to mention I had grown accustomed to having bulletproof coffee in the mornings as breakfast. Food is just not my friend first thing in the morning.
Slowly but surely my cravings for coffee dissipated, I now go weeks without even really paying attention to it despite an espresso machine and counter full of coffee equipment are staring me down and others in my house still consume it. These days however, I prefer a Golden Latte (made with coconut milk) bulletproof style, and with collagen added!
Not only is it “forget about PSL” delicious, its filling thanks to the collagen and a healthy dose of good-for-you fats!
AIP Golden Milk Latte
6-8 oz Coconut Milk (from the carton, not the can)
1 tsp Golden Spice Blend
Pinch of Himalayan Pink Salt
1 serving Collagen, Vital Proteins (blue canister) is my brand of choice (2 scoops/20 grams)
1 Tbsp Grass-fed Butter or Ghee (Kerrygold) omit for AIP
1 Tbsp high quality MCT Oil ( Coconut Oil will do, since I drink this for breakfast I prefer Brain Octaine)
*Maple syrup to taste (1 tsp is VERY sweet, a little goes a long way.
Heat coconut milk. Mix collagen and spices together in mug, add MCT and stir with a fork until it forms a sandy paste, this helps everything incorporate more consistently, but is absolutely not required Stir in coconut milk and butter*. Sweeten to taste with maple. Enjoy as is or dilute to your liking with hot water.
