AIP Sloppy Joes
A familiar childhood favorite reimagined without all of the processed crap! I haven’t enjoyed a sloppy joe since I was a kid, even then I’m not quite sure I “enjoyed” them per-se. They were made from a packet (do they still have that section in stores? The “dad is in charge of dinner section” is what we used to call it! Turns out its pretty easy to make from scratch without all the junk AND its totally possible to keep it AIP compliant, plus it still comes together fast and easy in one pan! This recipe leverages smoked sea salt, molasses and vinegar to get us to that familiar ol’ barbeque-esq flavor and gets its richness from AIP Fauxmato and bone broth.
This would be an excellent recipe to sneak in minced mushrooms or even liver for an added nutrition boost for those picky eaters!
Ingredients
1 lb ground beef (bonus points for local grass-fed meat)
2 Tbsp fat of choice (bring on the bacon renderings for an extra hit of smoky flavor)
1 large onion finely diced
4-6 cloves garlic, minced
1 tsp smoked sea salt
1 Tbsp Blackstrap Molasses
1 tsp Apple Cider Vinegar
1 cup AIP Fauxmato sauce ( linked )
1/2-1 cup bone broth (add to desired consistency)
Method
In medium saucepan, over medium-high heat, melt fat and add onions and garlic. Saute until lightly browned and the pan is starting to build fond.
Add ground beef, smoked salt and 1/2 cup broth, break up beef in to very small crumbles as it cooks and browns.
When only a small amount of pink remains, add the Molasses, vinegar and Fauxmato sauce. Reduce heat and simmer over medium heat, stirring until thoroughly combined and it reaches the desired consistency.
Enjoy on an AIP flatbread or over a split sweet potato with a fistful of cilantro and a generous serving of veg on the side
